CINNAMON BUN SCONES
List of Ingredients
- 2 CUPS FLOUR
- 1 CUP OATMEAL
- 1/4 CUP PLUS 2 TABLESPOONS SUGAR DIVIDED
- 1 TABLESPOON BAKING POWDER
- 1/4 TEASPOON SALT
- 1 STICK COLD BUTTER CUT INTO 8 PIECES
- 3/4 CUPS MILK
- 1 EGG LIGHTLY BEATEN
- 1 TEASPOON VANILLA
- 1/2 CUP TOASTED PECANS
- 2 TEASPOONS GROUND CINNAMON
- GLAZE: RECIPE BELOW
Instructions
- PREHEAT OVEN TO 425°. SPRAY COOKIE SHEET WITH NONSTICK COOKING SPRAY AND SET ASIDE.
- IN A LARGE BOWL, COMBIEN FLOUR, OATMEAL, 1/4 CUP SUGAR, BAKING POWDER AND SALT MIXING WELL. CUT IN BUTTER WITH A PASTRY BLENDER OR YOUR FINGERS UNTIL MIXTURE RESEMBLES COARSE CRUMBS.
- IN A SMALL BOWL, COMBIEN MILK, EGG AND VANILLA, BLENDING WELL. ADD TO DRY INGREDIENTS ALL AT ONCE AND STIR WITH A FORK OR RUBBER SPATULA JUST UNTIL DRY INGREDIENTS ARE MOISTENED.
- IN A SMALL BOWL, COMBINE REMAINING 2 TABLESPOONS SUGAR WITH PECANS AND CINNAMON, MIXING WELL. SPRINKLE EVENLY OVER DOUGH IN BOWL, GENTLY STIR BATTER TO SWIRL IN CINNAMON/NUT MIXTURE. ( DO NOT BLEND COMPLETELY).
- DROP DOUGH BY 1/4 CUPFULS 2" APART ON COOKIE SHEET. BAKE 11 TO 13 MINUTES OR UNTIL GOLDEN BROWN. REMOVE TO A WIRE RACK AND COOL 5 MINUTES. DRIZZLE WITH GLAZE OVER TOPS OF WARM SCONES AND SERVE.

- IN A SMALL BOWL, COMBINE 3/4 CUPS CONFECTIONERS' SUGAR AND 3 TO 4 TEASPOONS ORANGE JUICE OR MILK MIXING WELL UNTIL SMOOTH.
