CREAMY APPLE SCONES
List of Ingredients
- 2 CUPS CHOPPED TART APPLES
- 6 TABLESPOONS BUTTER
- 1/2 CUP WHIPPING CREAM
- 2 1/4 CUPS FLOUR
- 1/3 CUP SUGAR
- 1 TABLESPOON BAKING POWDER
- 1/4 TEASPOON SALT
- 2 TABLESPOONS COARSE SUGAR
Instructions
- PREHEAT OVEN TO 400°.
- MELT 2 TABLESPOONS OF BUTTER IN A FRYING PAN. ADD APPLES AND COOK OVER MEDIUM HIGH HEAT, STIRRING FREQUENTLY UNTIL TENDER AND WATER FROM APPLES IS ALMOST EVAPORATED. REMOVE FROM HEAT AND SET ASIDE.
- IN A MIXING BOWL, MIX FLOUR, SUGAR, BAKING POWDER AND SALT. CUT IN REMAINING 4 TABLESPOONS OF BUTTER UNTIL MIXTURE RESEMBLES A COARSE CRUMB ( THIS CAN BE DONE IN YOUR FOOD PROCESSOR).
- ADD WHIPPING CREAM AND APPLES AND MIX BY HAND UNTIL THE MIXTURE FORMS A BALL. REMOVE TO A FLOURED SURFACE AND KNEAD 6 TIMES. PAT DOUGH OUT INTO A 8 OR 10" CIRCLE ON A BAKING SHEET. SPRINKLE WITH COARSE SUGAR AND CUT INTO 12 WEDGES. SEPARATE EACH WEDGE SLIGHTLY.
- BAKE FOR 20 TO 25 MINUTES OR UNTIL GOLDEN BROWN.
