DRIED CRANBERRY SCONES
List of Ingredients
- 3 CUPS FLOUR
- 1/3 CUP SUGAR
- 2/12 TEASPOONS BAKING POWDER
- 1/2 TEASPOON BAKING SODA
- 3/4 CUP BUTTER OR MARGARINE1 TEASPOON ORANGE ZEST
- 1 CUP BUTTERMILK
- 1 CUP DRIED CRANBERRIES
- 2 TABLESPOONS SUGAR
- 1/4 TEASPOON CINNAMON
- 1 TABLESPOON MILK OR HEAVY CREAM
Instructions
- PREHEAT OVEN TO 400°.
- COMBINE 2 TABLESPOONS SUGAR, 1/4 TEASPOON CINNAMON AND 1 TABLESPOON MILK OR CREAM IN A BOWL TILL BLENDED SET ASIDE FOR BRUSHING TOPS OF SCONES.
- IN A LARGE BOWL, COMBINE THE FLOUR, SUGAR, BAKING POWDER, BAKING SODA UNTIL WELL BLENDED. ADD BUTTER OR MARGARINE AND ORANGE ZEST UNTIL MIXTURE RESEMBLES CRUMBS. ( WORK IN WITH YOUR FINGERS OR WITH A PASTRY BLENDER) ADD THE BUTTERMILK AND CRANBERRIES AND MIX UNTIL DRY INGREDIENTS ARE MOISTENED.
- GATHER DOUGH INTO A BALL AND KNEAD LIGHTLY APPROXIMATELY 10 TO 12 TIMES ON A LIGHTLY FLOURED SURFACE. DIVIDE DOUGH INTO 4 PIECES. PAT EACH SECTION INTO A 1/2 TO 3/4 THICK CIRCLE. CUT EACH CIRCLE INTO 6 WEDGES. TRANSFER TO A BAKING SHEET. BRUSH SCONES WITH SUGAR, CINNAMON CREAM MIXTURE.
- BAKE FOR APPROXIMATELY 15 TO 20 MINUTES OR UNTIL GOLDEN BROWN AND BAKED THROUGH.
