IRISH CREAM SCONES
List of Ingredients
- 2 CUPS FLOUR
- 1/4 CUP SUGAR
- 2 TEASPOON BAKING POWDER
- 1/8 TEASPOON SALT
- DASH OF NUTMEG AND CINNAMON
- 1/3 CUP COLD BUTTER
- 1 EGG
- 1/2 CUP HEAVY CREAM
- 1 TEASPOON VANILLA
- 1/2 CUP RAISINS, SOAKED 5 MINUTES IN WARM BRANDY TO COVER AND DRAINED
Instructions
- PREHEAT OVEN TO 425°.
- IN A LARGE BOWL, MIX TOGETHER FLOUR, SUGAR, BAKING POWDER, SALT, NUTMEG AND CINNAMON. CUT IN BUTTER WITH YOUR FINGERS OR WITH A PASTRY CUTTER.
- IN A SMALL BOWL, MIX EGG, CREAM AND VANILLA. ADD CREAM MIXTURE AND RAISINS TO DRY INGREDIENTS.
- MIX WITH A WOODEN SPOON JUST UNTIL BLENDED. ( DO NOT OVER MIX). ON A FLOURED BOARD PAT OUT INTO AN EVEN 9" ROUND MOUND. WITH FLOURED KNIFE, CUT INTO 8 WEDGES. PLACE ON GREASED BAKING SHEET AND BAKE 10 TO 12 MINUTES OR UNTIL GOLDEN BROWN.
