KILLER BUTTERMILK SCONES
List of Ingredients
- 2 1/2 CUPS FLOUR
- 2 1/2 TEASPOONS BAKING POWDER
- 1/2 TEASPOON SALT
- 1/2 CUP DRIED CURRANTS
- 1 EGG, SLIGHTLY BEATEN
- 2 TABLESPOONS SUGAR
- 1/2 TEASPOON BAKING SODA
- 1/2 CUP SWEET COLD BUTTER, CUBED
- 1 CUP BUTTERMILK
Instructions
- PREHEAT OVEN TO 425°.
- COMBINE FLOUR, SUGAR, BAKING POWDER, BAKING SODA AND SALT IN A FOOD PROCESSOR BOWL. WHILE PROCESSOR IS RUNNING, ADD BUTTER AND PROCESS UNTIL THE MIXTURE RESEMBLES COARSL MEAL. TRANSFER TO A BOWL AND ADD CURRANTS MIXING WELL. ADD BUTTERMILK AND STIRRING QUICKLY WITH A FORK UNTIL THE DOUGH IS SOFT AND SLIGHTLY STICKY. WITH FLOURED HANDS, PRESS THE DOUGH INTO A BALL. KNEAD GENTLY 12 TIMES.
- FLATTEN DOUGH INTO A 1" THICK CIRCLE AND CUT OUT WITH DESIRED SIZE ROUND CUTTER. REPEAT UNTIL ALL DOUGH IS USED.
- BRUSH SCONES WITH EGG AND SPRINKLE WITH SOME SUGAR. BAKE 12 TO 15 MINUTES.
