OATMEAL SCONES
List of Ingredients
- 1 3/4 CUPS FLOUR
- 1 1/2 TEASPOONS BAKING OWDER
- 3/4 TEASPOONS BAKING SODA
- 1/2 TEASPOONS SALT
- 1/3 CUP SUGAR
- 3/4 CUP COLD SWEET BUTTER, CUBED
- 1 1/3 CUPS OLD FASHIONED ROLLED OATS
- 1/2 CUP DRIED CURRANTS
- 1/2 CUP BUTTERMILK
- 1 EGG LIGHTLY BEATEN
Instructions
- PREHEAT OVEN TO 375°.
- IN A FOOD PROCESSOR, COMBINE THE FLOUR, BAKING POWDER, BAKING SODA, SALT AND SUGAR. ADD THE BUTTER AND BLEND UNTIL IT RESEMBLES COARSE CRUMBS. MIX IN OATS, CURRANTS AND BUTTERMILK UNTIL IT JUST FORMS A STICKY DOUGH.
- ON A LIGHTLY FLOURED SURFACE KNEAD DOUGH GENTLY 6 TIMES AND ROLL DOUGH TO A 1" THICKNESS. WITH A 3" ROUND BISCUIT CUTTER DIPPED IN FLOUR CUT OUT AS MANY ROUNDS AS POSSIBLE, TRANSFERING TO A LIGHTLY GREASED BAKING SHEET.
- GATHER SCRAPS AND RE-ROLL DOUGH AND FINISH CUTTING OUT CIRCLES. BRUSH SCONES WITH BEATEN EGG, SPRINKLE WITH SOME SUGAR AND BAKE FOR 20 MINUTES OR UNTIL GOLDEN BROWN.
