    • 1 TABLESPOON BUTTER, SOFTENED
    • 1/2 CUP SUGAR
    • 1 EGG
    • 2 CUPS SELF RISING FLOUR
    • 1 CUP PUNPKIN PUREE
    • 1/8 TEASPOON SALT


    Instructions


    1. PREHEAT OVEN TO 425°. LIGHTLY GREASE A COOKIE SHEET AND SET ASIDE.
    2. CREAM TOGETHER THE BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY. ADD EGG AND BEAT WELL.
    3. ADD PUMPKIN, FLOUR AND SALT AND FOLD IN BY HAND. KNEAD LIGHTLY ON A DUSTED BOARD AND CUT INTO 1" SQUARES. PLACE CLOSE TOGETHER ON BAKING SHEET AND BAKE UNTIL WELL RISEN AND GOLDEN ON TOP ABOUT 15 MINUTES. SERVE WARM WITH BUTTER.
    4. YIELDS: 4 TO 6 SERVINGS.
