PUMPKIN SCONES
List of Ingredients
- 1 TABLESPOON BUTTER, SOFTENED
- 1/2 CUP SUGAR
- 1 EGG
- 2 CUPS SELF RISING FLOUR
- 1 CUP PUNPKIN PUREE
- 1/8 TEASPOON SALT
Instructions
- PREHEAT OVEN TO 425°. LIGHTLY GREASE A COOKIE SHEET AND SET ASIDE.
- CREAM TOGETHER THE BUTTER AND SUGAR UNTIL LIGHT AND FLUFFY. ADD EGG AND BEAT WELL.
- ADD PUMPKIN, FLOUR AND SALT AND FOLD IN BY HAND. KNEAD LIGHTLY ON A DUSTED BOARD AND CUT INTO 1" SQUARES. PLACE CLOSE TOGETHER ON BAKING SHEET AND BAKE UNTIL WELL RISEN AND GOLDEN ON TOP ABOUT 15 MINUTES. SERVE WARM WITH BUTTER.
