- 1 1/2 CUPS FLOUR
- 2 TEASPOONS BAKING POWDER
- 1 TEASPOON BAKING SODA
- 1/2 TEASPOON SALT
- 1/4 TEASPOON SUGAR
- 4 TABLESPOONS COLD BUTTER, CUBED
- 1/2 CUP GOLDEN RAISINS
- 3/4 CUP PLAIN NONFAT YOGURT
- GRATED PEEL OF 1/2 LEMON
- MILK
Instructions
- PREHEAT OVEN TO 425°. LIGHTLY GREASE A BAKING SHEET WITH A COOKING SPRAY.
- SIFT TOGETHER FLOUR, BAKING POWDER, BAKING SODA AND SALT. STIR IN SUGAR AND CUT IN THE BUTTER WITH A PASTRY BLENDER OR WITH YOUR FINGERS UNTIL MIXTURE RESEMBLES CRUMBS. MIX IN RAISINS.
- COMBINE YOGURT AND LEMON PEEL. WITH A FORK, STIR INTO DRY MIXTURE TO FORM A STIFF DOUGH.
- TURN OUT ONTO A FLOURED BOARD AND KNEAD WITH HANDS JUST UNTIL SMOOTH.
- ROLL DOUGH OUT TO 1/2" THICK CUT OUT WITH A 2" FLOURED BISCUIT CUTTER.
- ARRANGE ON COOKIE SHEET. BRUSH TOPS WITH MILK AND BAKE FOR 10 TO 12 MINUTES OR UNTIL LIGHTLY BROWNED. COOL ON A WIRE RACK AND SERVE IMMEDIATELY WITH BUTTER AND PRESERVES OF YOUR CHOICE.
