    STREUSEL OAT SCONES

    THIS RECIPE COMES FROM THE CEDAR CREEK BED AND BREAKFAST IN OKLAHOMA.


    List of Ingredients


    • 2 CUPS ALL PURPOSE FLOUR
    • 2 TEASPOONS BAKING POWDER
    • 1/4 TEASPOON BAKING SODA
    • 1/4 TEASPOON SALT
    • 1/4 CUP SUGAR
    • 1/4 CUP CHILLED STICK BUTTER OR MARGARINE, CUT INTO SMALL PIECES
    • 3/4 CUP LOW FAT BUTTER MILK
    • COOKING SPRAY
    • 1/4 CUP QUICK COOKING OATS
    • 1/4 CUP PACKED BROWN SUGAR
    • 1 TABLESPOON MELTED BUTTER OR MARGARINE
    • 1 TABLESPOON FLOUR


    Instructions


    1. PREHEAT OVEN TO 450°.
    2. IN A LARGE BOWL, COMBINE FLOUR, BAKING POWDER, BAKING SODA, SALT AND SUGAR; CUT IN 1/4 CUP BUTTER OR MARGARINE WITH A PASTRY BLENDER OR FORK, OR 2 KNIVES UNTIL MIXTURE RESEMBLES COARSE MEAL. ADD BUTTERMILK, STIRRING JUST UNTIL FLOUR MIXTURE IS MOIST.
    3. TURN DOUGH OUT ONTO A BAKING SHEET COATED WITH COOKING SPRAY. PAT DOUGH INTO AN 8" CIRCLE, SET ASIDE.
    4. COMBINE OATS, BROWN SUGAR, 1 TABLESPOON BUTTER OR MARGARINE AND 1 TABLESPOON FLOUR; WORK THE MIXTURE UNTIL YOU FORM THE STREUSEL.
    5. GENTLY PAT STREUSEL INTO SURFACE OF DOUGH. CUT DOUGH INTO 12 WEDGES ( DO NOT SEPERATE WEDGES).
    6. BAKE FOR 15 MINUTES OR UNTIL LIGHTLY BROWNED. SERVE WARM. YIELDS, 1 DOZEN
