List of Ingredients
- 2 CUPS FLOUR
- 1/4 CUP SUGAR
- 1 TABLESPOON SUGAR FOR SPRINKLING TOPS
- 2 TEASPOONS BAKING POWDER
- 1/2 TEASPOON SALT
- 3 TABLESPOONS SWEET BUTTER
- 1 1/2 CUPS BUTTERMILK
- 1 CUP FRESH OR FROZEN BLUEBERRIES OR 1/3 CUP RAISINS YOUR CHOICE
Instructions
- PREHEAT OVEN TO 350°.
- IN A LARGE BOWL, STIR TOGETHER FLOUR, SUGAR BAKING POWDER AND SALT. CUT IN BUTTER WITH A PASTRY BLENDER OR YOUR FINGERS UNTIL MIXTURE RESEMBLES COARSE CRUMBS. STIR IN BLUEBERRIES OR RAISINS. MAKE A WELL IN THE CENTER AND GRADUALLY STIR IN BUTTERMILK JUST UNTIL BLENDED. DOUGH SHOULD BE STICKY.
- DROP BY SPOONFUL ONTO A BAKING SHEET SPRAYED WITH COOKING SPRAY. SPRINKLE TOPS WITH REMAINING SUGAR.
- BAKE IN OVEN FOR 15 TO 20 MINUTES OR UNTIL PUFFED AND LIGHTLY BROWNED.
- APPROXIMATELY 14 SCONES
- THESE CAN BE COOKED ON A GRIDDLE OR BAKED IN THE OVEN. THESE ARE QUICK AND EASY TO MAKE. THESE ARE DROPPED FROM A LARGE SPOON TO ENSURE LITTLE HANDLING OF THE DOUGH AS POSSIBLE TO ENSURE A LIGHT AS A FEATHER SCONE.
