APPLE FRITTERS
List of Ingredients
- 4 APPLES, PEELED, CORED AND CHOPPED
- 3 TABLESPOONS SUGAR
- 1/4 CUP APPLE BRANDY
- 2 EGGS, SEPARATED
- 1 TABLESPOON VEGETABLE OIL
- 1 CUP FLOUR
- PINCH OF SALT
- VEGETABLE OIL FOR FRYING
- CONFECTIONERS' SUGAR FOR DUSTING FRITTERS
Instructions
- IN A SMALL BOWL, TOSS THE APPLES WITH THE SUGAR AND BRANDY. LET MARINATE FOR 1 HOUR. DRAIN AND RESERVE LIQUID.
- IN A MEDIUM BOWL BEAT THE EGG YOLKS, RESERVED LIQUID FROM APPLES AND 1 TABLESPOON VEGETABLE OIL. STIR IN THE FLOUR AND SALT. COVER AND REFRIGERATE FOR 1 HOUR.
- IN A DEEP SKILLET HEAT AT LEAST 1" OF VEGETABLE OIL TO 375°.
- BEAT THE EGG WHITES UNTIL STIFF PEAKS FORM. FOLD BEATEN WHITES INTO BATTER AND THEN FOLD APPLES INTO BATTER.
- SPOON ABOUT 1/8 CUP OF BATTER INTO THE HOT OIL AND FRY UNTIL GOLDEN ON ALL SIDES, ABOUT 3 TO 4 MINUTES.
- FRY ABOUT 4 TO 5 FRITTERS AT A TIME.
- REMOVE WITH A SLOTTED SPOON AND LET DRY ON PAPER TOWELS.
- SPRINKLE WITH CONFECTIONERS' SUGAR AND SERVE HOT.
Final Comments
THIS IS ONE OF MY CHILDHOOD FAVORITES. MY MOTHER WOULD ALWAYS HAVE THESE HANDY FOR US AFTER SCHOOL.
