BROCCOLI BISQUE

- 6 CUPS CHOPPED BROCCOLI
- 2 CUPS CHICKEN BROTH
- 1 MEDIUM CHOPPED ONION
- 2 TABLESPOONS FRESH LEMON JUICE
- 1 LARGE GARLIC CLOVE, MINCEDDD
- FRESHLY GROUND BLACK PEPPER TO TASTE
- 1 CUP 1/2 & 1/2 OR MILK
- SMALL BROCCOLI FLORETS FOR GARNISHING, STEAMED AL DENTE
Instructions
- IN A SMALL TO MEDIUM STOCK POT, COMBINE CHOPPED BROCCOLI, CHICKEN BROTH, ONION, LEMON JUICE, GARLIC, PEPPER AND 1 CUP WATER, BRING TO A BOIL.
- REDUCE HEAT TO MEDIUM, COOK COVERED FOR 12 TO 15 MINUTES OR UNTIL BROCCOLI IS TENDER, ADDING MORE WATER A TABLESPOON AT A TIME IF LIQUID IS EVAPORATING.
- TRANSFER BROCCOLI MIXTURE TO A FOOD PROCESSOR AND PUREE UNTIL SMOOTH.
- RETURN MIXTURE TO STOCK POT, STIR IN 1/2&1/2 OR MILK. COOK OVER LOW HEAT, STIRRING FREQUENTLY UNTIL HOT. DO NOT BOIL.
- SPOON SOUP EVENLY INTO 4 SOUP BOWLS AND GARNISH WITH BROCCOLI FLORETS.
