    Lordsburg Quiche

    Makes 6 servings.

    1 (9-inch) prepared pie shell
    3 cups grated Mexican cheese
    4 eggs
    1/2 cup milk
    1 (4 ounce) can chopped green chiles, drained

    Prick bottom and sides of pie shell with a fork. Bake at 400 degrees F for 10 to 12 minutes until crust begins to brown. Check halfway through the baking time to see if the crust is bubbling. If it is, prick the bubbles and continue baking.

    Remove pie shell from oven. Spread the cheese over the bottom.

    In a medium-size mixing bowl, beat the eggs and milk together. Stir the chiles into the egg and milk mixture. Pour into the pie shell.

    Bake at 400 degrees F for 45 minutes.

    Allow to stand for 10 minutes before cutting.
