    Pecan Log Roll

    1 cup butterscotch chips
    1/3 cup sweetened condensed milk
    1/2 teaspoon vanilla extract
    1 cup chopped pecans, divided
    1 egg white, slightly beaten

    Melt butterscotch chips in double boiler over simmering water. Remove from heat, then add sweetened condensed milk, vanilla extract and 1/2 cup pecans; stir well. Refrigerate until firm enough to handle.

    Spread candy onto wax paper, and form a 12-inch roll. Brush with egg white, then roll in remaining 1/2 cup pecans. Refrigerate until firm before slicing
