    Mincemeat

    4 cups green tomatoes
    4 cups apples cored, seeded, chopped (half peeled)
    4 cups seedless raisins
    2 cups currants
    8 tbsp date sugar
    1/2 medium lemon, including peel, coarsely ground
    1 tbsp cinnamon
    1.5 tsp nutmeg
    3/4 tsp cloves
    1/2 tsp allspice
    2 tbsp flour
    1/2 cup brandy or 2 tsp rum flavoring or 1/3 cup rum
    2 tbsp lemon juice

    grind all
    combine in large bowl
    add remaining ingredients, mixing after each addition
    cover & refrigerate at least overnight or several days
    may be canned or frozen

    pour into hot, sterile quart or pint jars, leaving 1/2 inch at top
    cover with hot sterile lids
    process in boiling water bath 20 mins for pints, 25 minutes for quarts
