Avocado and Cherry Tomato Kebabs

I am keeping my old profile open for my children and rewriting some of those recipes for my diet
List of Ingredients
- 2 avocadoes, skin and seed removed
- 1 punnet (350g) cherry tomatoes or small button mushrooms
- 8 halved bamboo skewers
- lime/lemon wedges or slices to decorate
- 1/4 cup lime or lemon juice
- 2 tsp honey
- 1 tsp cajun spice mix
- 2 tsp sesame oil
- 2 tsp peanut oil
- 2 chopped garlic cloves
- 2-3 tsp finely sliced green chilli
Instructions
- Place juice, oils, honey, spices, garlic and chilli in a small bowl and whisk well (with a fork is fine)-can marinate mushrooms in half of it if you like
- Cut avocado in half lengthways and then crossways into 1 1/2 cm thick slices.
- Thread tomatoes (or mushrooms) and avocado onto skewers and arrange on serving plates. Drizzle over marinade and serve with paprika mayonnaise (optional).
