    Jerk-spiced sweet potato with pine-mango

    If you don't want sweet potato try cauliflower, firm tofu or mushroom or use jerk spices on a vegan schnitzel

    serves 4


    List of Ingredients


    • 1/4 cup (60ml) olive oil + 1 tbs extra
    • 1/4 cup (60ml) soy sauce
    • 4 spring onions, coarsely chopped plus 8 extra, trimmed
    • 1 long green chili deseeded and coarsely chopped
    • 20g ginger, peeled, thinly sliced
    • 3 garlic cloves
    • 2 limes, zested
    • 1 1/2 tsp brown sugar
    • 1 1/2 tsp thyme leaves
    • 1/2 tsp ground allspice
    • 1/2 tsp ground cinnamon
    • 2-3 sweet potato, peeled and sliced
    • 1 mango, stoned, peeled and thinly sliced
    • 1/2 pineapple, peeled, quartered, cored, thinly sliced
    • 2 tsp lime juice
    • Asparagus or green beans (optional) topped and tailed
    • coconut rice with beans (see recipe in rice section)


    Instructions


    1. In a food processor (or I use mortar and pestle), process oil, soy sauce, chopped spring onions, chili, ginger, garlic, lime zest, sugar, thyme, allspice, cinnamon, salt and pepper until well combined.
    2. Reserve 1/4 cup (60ml or about half) jerk mixture. Pour remaining jerk mixture over sweet potato and toss to coat. Cover and refrigerate (ideally 6 hours)
    3. Make coconut rice (if using)
    4. In a bowl toss mango and pineapple with lime juice and 1/2 tsp of reserved jerk mixture. Season with salt flakes. Set aside for 10 minutes then transfer to serving bowl.
    5. Drain sweet potato but keep marinade to baste. Barbecue on med-high heat until tender and cooked through. Coat spring onions and beans or asparagus with drained jerk marinade. Barbecue until lightly charred. Place on serving dish with sweet potato on top. Cut zested limes in half and use as garnish (squeeze over food as liked). Serve with coconut rice.


    Final Comments


    Serve with prosecco with or without strawberry syrup in it (or beer). Feel smug as anything because being vegan does not mean self-denial.
