    1/3 cup olive oil

    750g button mushrooms, thinly sliced

    3 garlic cloves, crushed

    2 cups gluten free breadcrumbs

    2 tbs chia seeds soaked in 4tbs water

    4 shallots, thinly sliced

    1 tsp ground cumin

    small loaf gluten free turkish bread cut into squares (or other gluten free bread)

    salad or rocket leaves

    vegan mayonnaise or tomato sauce or mango chutney...or....?

    Heat 2 tbs oil in lge frypan over medium heat.

    Add mushrooms, shallots, garlic and cumin. Cook 2-3 minutes or until mushrooms are soft.

    Increase heat to medium high and cook 10-12 minutes so that moisture evaporates.

    Puree half of mushroom mix until smooth.

    Transfer to a large bowl, mixing in remaining mushrooms, breadcrumbs and chia seeds and water. Mix well.

    Shape evenly into 4 patties. Heat remaining oil in a large non-stick frypan over med-high heat.

    Add patties and cook 4-5 minutes each side or until golden.

    Preheat grill on high. Split turkish bread in half lengthways and toast until golden.

    Place mayonnaise or sauce, salad and mushroom patties on bread and serve immediately.
