    • 2 white peaches (or nectarines) stoned, coarsely chopped
    • 1 lemon, juiced
    • 2 tbs caster sugar
    • 3 cups prosecco, chilled
    • 4 scoops lemon, mango or berry sorbet


    Instructions


    1. Place peach, lemon juice (or use lime) and sugar in a medium saucepan over medium heat. Cover and cook, stirring occasionally for 5 mins or until fruit is tender. Cool slightly and blend until smooth. Chill for 1 hour.
    2. Divide evenly between serving glasses. Pour over prosecco, top with sorbet and serve immediately
