    serves 1-2. Yes ok these are pancakes without wheat, milk or egg wtf am I doing. But wait until you taste them.


    List of Ingredients


    • approx 1/3 of a 375g buckwheat pancake mix (I used Orgran gluten free)
    • 2 tbs black chia seeds soaked in 4tbs water (or use non-dairy milk)
    • 1 cup almond milk (I used Australia's Own Organic blended with coconut)
    • 1/4 cup walnuts (I ground them up in my mortar and pestle, sometimes I just break them or chop them for larger crunch)
    • (if you don't like walnuts leave them out or use LSA instead)
    • 1 tbs macadamia oil (optional)
    • 6 strawberries
    • a tiny drizzle maple syrup (when I am being a cheapskate I use raw 1/2 tsp raw sugar instead)
    • pinch salt (optional)
    • generous sprinkle (maybe about 1/2 tbs) cinnamon


    Instructions


    1. Mix together the pancake mix, chia seeds and their liquid, almond milk, walnuts, cinnamon and macadamia oil
    2. Melt some nuttelex or use an oil you like (eg olive or canola) to fry the pancakes.
    3. Stack 2 pancakes with sliced strawberries. Drizzle with maple syrup or sprinkle with sugar. Enjoy with your cup of coffee for a weekend breakfast
