    Time to feel better toast

    I've been eating too much fake meat and stuff like that lately and it is time to feel better. Almost every ingredient of this will have suggested alternatives. This is serves 2 (but can be serves 1 over 2 small meals)


    List of Ingredients


    • 2 slices wholegrain toast (or use grilled slices of sweet potato if avoiding bread)
    • 1 spring onion (or use basil, garlic chives, coriander, capers, olives or even mint)
    • pinch salt
    • pepper (optional)
    • 2 tbs good olive oil
    • 1 tbs lemon juice (optional)
    • 1 radish, finely chopped (can use a bit of grated daikon or beetroot)
    • 1 tomato finely chopped (can use a bit of capsicum or corn kernels instead)
    • 1/2 avocado, chopped (can use a handful baby spinach leaves- fresh or wilted)


    Instructions


    1. Mix all vegies together with the salt, pepper if using oil and lemon juice.
    2. Pile onto toast
    3. Feel better than when you were eating crap
