    List of Ingredients


    • 15 oz can (1 3/4 cup) black-beans, well-rinsed and drained
    • 2 large flax eggs (2 tbs ground flax seeds soaked in 6 tbs water)
    • 3 tbs coconut or macadamia oil
    • 3/4 cup cocoa powder
    • 1/4 tsp sea salt
    • 1 tsp pure vanilla extract
    • 1/2 cup raw sugar
    • 1 1/2 tsp baking powder


    Instructions


    1. Preheat oven to 350F. Grease muffin tin (but not mini)
    2. Combine flax and water. Rest for a few minutes.
    3. Whisk or food process all ingredients together (mash beans. This needs to be really smooth)
    4. The consistency should be slightly runnier than frosting. Add 1 tbs water if needed, make sure you don't overdo it.
    5. Distribute into muffin tins, smooth tops with spoon or fingers.
    6. Bake 20-26 minutes until the top is dry
    7. Remove from oven. Cool 30 min in pan before gently removing.
    8. Store in the fridge in an airtight container.


    Final Comments


    Before baking you could sprinkle with choc chips or walnuts if you liked.
