    Recipe Introduction


    serves about 6 or more (or one over 6 days) ideal as a dessert or a snack for morning tea, etc


    List of Ingredients


    • 1/2 cups chia seeds. White ones are more discreet but I like the spotty appearance of black ones
    • 1 tin (400g) coconut cream (maybe could try soy yoghurt instead?)
    • 1/2 - 1 tsp sugar (or maple syrup, or some healthy alternative like stevia)
    • a few drops vanilla essence
    • raspberry sauce (or crushed raspberries)


    Instructions


    1. Mix together chia, coconut cream, sugar to taste (less is more unless the fruit is very sour) and vanilla in a container that has a lid. Let soak in the fridge overnight
    2. Spoon into individual glasses (or a small smash container if taking to work) and add a layer of raspberry sauce over the top


    Final Comments


    Instead of vanilla flavor with slivered almonds, wattleseed extract, coffee, cacao OR lemon zest

    Instead or raspberries try other berries, fresh passionfruit, apple sauce, stewed rhubarb, fruit salad (a finely chopped one methinks), mango, apricot or quandong)
