Passionfruit and Melon Mousse

List of Ingredients
- 1 tbsp agar agar flakes
- 1 honeydew melon, peeled, seeded and chopped
- 1/2 cup hot water
- 1/4 cup loosely packed raw sugar
- 1/2 cup orange juice
- pulp of 4 ripe passionfruit
Instructions
- Place agar agar in hot water. Stir with a fork until dissolved. Place in blender with melon, sugar, orange juice and blend until smooth and frothy
- Transfer to a large serving bowl and fold in passionfruit pulp. Refrigerate until nearly set, Stir again and return to frisge until set.
Final Comments
Should be nice with a coconut based ice confection or sliced banana
