makes about 1 cup. I tend to get 1-3 eggplants (depending on size) slice them and grill or deepfry them. If I want more acid in the flavour I add balsamic vinegar
List of Ingredients
- 290g jar marinated eggplants (or preferably see above)- halved eggplants deepfry quite well
- 1/3 cup tahini (sesame paste)
- 2 tbs lemon juice
- 2 cloves garlic (optional)
Instructions
- Process until smooth and serve with snow-peas, carrot sticks, celery, capsicum, gluten free crackers etc
