    I will list all the vegies I sometimes use and you just have to pick 3 or 5 or however many of them you like to use. Add plain or marinated tofu too if you like


    List of Ingredients


    • vermicelli (prepared by soaking in boiling water)
    • bowl of hot water (not too hot)
    • Avocado slices
    • Snowpeas, sliced lengthways
    • Cucumber sticks
    • Beansprouts or other sprouts
    • shredded lettuce or baby spinach
    • rocket
    • grated carrot
    • grated beetroot (hard work)
    • finely sliced celery
    • sliced tomato (in julienne slices)
    • very finely shredded cabbage or brussels sprouts (yes raw)
    • sliced mushroom (raw or cooked)
    • sliced spring onion (or red onion)
    • Sweetcorn kernels
    • sliced capsicum
    • fresh coriander
    • fresh mint
    • sauces of your choice (gf soy or hoisin I use)
    • crushed peanuts (optional)
    • coldroll wrappers (from Asian section of supermarket)


    Instructions


    1. Prepare vermicelli and all vegies.
    2. Each person takes a wrapper quickly swirls it through the bowl of hot water and starts working with it while it hasn't softened completely (or it falls apart if you soften it too much)
    3. Pile on whatever combination of vermicelli, herbs and vegies you want, add a bit of sauce and nuts and wrap up
    4. OR...you can make them ahead and take to picnics etc.
