    serves 4-6 greedies. Serve hot or cold if taking to a picnic. Add different vegies (celery, zucchini, mushroom, beansprout, baby spinach) if you prefer. All ingredients optional depending on availablility


    List of Ingredients


    • 1 onion, finely sliced
    • 1 1/2 cups dry brown lentils
    • 2-3 curry leaves
    • 1 tsp veg stock powder
    • 2 cloves garlic, finely chopped
    • 1 small piece ginger, finely chopped
    • 1 carrot grated
    • 1/2 red capsicum, finely sliced
    • 1 tsp rice malt syrup or maple syrup (optional)
    • 1 tbs soy sauce (I used gluten free)
    • 1 tsp chilli jam (or use fresh or dried chilli or sriracha sauce)
    • coconut oil
    • sesame oil
    • fresh spring onion
    • fresh coriander (or mint or basil)
    • iceberg lettuce (or any lettuce that is good for wrapping things in)
    • wedges of lemon


    Instructions


    1. Soak lentils 6 hours or more. Drain off water, rinse. Add 2 cups water, curry leaves and stock powder. Bring to boil, turn down low and simmer until lentils tender and water evaporated (or nearly). If needed add more water.
    2. Heat coconut oil. Saute onion, carrot, garlic and ginger until fragrant. Add capsicum (bell pepper) and stirfry about 2 minutes. Add lentils, and sauces and mix well. Allow to cook about 5 minutes (maybe even less) stirring.
    3. Wrap spoonfulls of mix in lettuce leaves with fresh herbs a squeeze of lemon (optional). Equally good hot or cold.


    Final Comments


    Popular with my son who is not always convinced about "healthy food". Possibly better with a glass of dry white or a cider. Inexpensive (without the booze)
