    Brussels Sprouts and Mushroom

    List of Ingredients


    • 450g Brussels sprouts, halved
    • 230g sliced mushrooms
    • 1 small onion, chopped finely (or use shallots)
    • 2-3 cloves garlic, finely chopped
    • 3/4 cup veg stock (sometimes I use half white wine)
    • salt and pepper


    Instructions


    1. Heat stock (not if using wine)
    2. Saute onions with salt. If you dont want to use oil, add some stock to stop them sticking (I just use extra virgin olive oil because I dont give a **** how fat I am so long as I am healthy and full of energy)
    3. After 2-3 minutes of onion sauteing add in the garlic. give it a good stir until fragrant and set aside.
    4. Place sprouts in pan cut side down (if not non-stick pan use oil but I hear you, some people are afraid of oil) Cook sprouts until they begin to brown. Add mushrooms and stir for 1-2 minutes.
    5. Add wine and/or the veg stock. Add onions back in. Stir well, turn down heat and cover tightly.
    6. Cook until sprouts are tender (3-5 minutes) adding in more broth if necessary.
    7. Garnish with salt and pepper and as an optional twist add some grated orange peel.
