    Recipe Introduction


    Made about 6 serves but demolished by greedy teenager. I would have used curry leaf instead of limeleaf if I had it but Seb said it was the best I have ever made


    List of Ingredients


    • 1 onion chopped
    • 3 cloves garlic, chopped
    • 1cm ginger (or something, might have been more)
    • 1 large ripe tomato
    • 1 heaped tsp sambal oelek
    • 1 large carrot, chopped
    • 2 small lime leaves
    • A lot of turmeric (maybe 1 tbs)
    • 1/2 tsp cinnamon
    • 1/2 tsp cumin
    • 1/4 tsp cardamom
    • 3 tbs stock powder (can use less)
    • 1 cup brown lentils
    • 1/2 cup dried green split peas
    • 1 cup red lentils
    • 1/3 cup coconut milk powder (can use coconut milk or any vegan milk)
    • maybe I added chilli, hard to remember.
    • Olive oil (or use rice, coconut or canola)


    Instructions


    1. Soak brown lentils and green split peas about 6 hours. Drain and rinse well.
    2. Saute onion until fragrant. Add ginger, garlic, and tomato. Cook stirring for about 2 minutes.
    3. Add sambal oelek, stir well and add carrot. Cook on low for a bit until it starts collapsing.
    4. Add in all spices and stir rapidly until you can smell the divine flavour. Add stock powder and about 4 cups water.
    5. Add in lentils, including dried red lentils. Stir well. Bring to boil. Add in coconut powder, stirring to get rid of lumps.
    6. Cook on low for 30-40 minutes. Serve over Jasmine rice if you have a fussy teen otherwise brown rice will do. Can also call it "soup and serve with crusty bread (garnish with rocket if you want to)


    Final Comments


    Obviously you could throw in spinach or something (kale, beetroot greens,) if not cooking for Seb. I thought it would be nice with a glass of dry white.
