    Recipe Introduction


    This is a cheat's gnocchi for when I have done nine hours with toddlers and can;t be bothered cooking properly (but still relatively healthy, especially with an easy salad on the side). The sauce is too salty so I make my own when I can, but given enough fresh veg it's ok


    List of Ingredients


    • 1/2 packet gluten free gnocchi
    • 1/3 jar pasta sauce (eg lego stir through with roasted veg, but any you like really)
    • 2 cloves garlic (less if you like)
    • olive oil
    • large handful baby spinach leaves (or chard or any green you like)
    • 3/4 cup frozen green beans (or corn, peas, broccoli, anything you like)


    Instructions


    1. Heat salted water, cook pasta with frozen veg, drain. Place saucepan back over fire and add oil. Add in finely diced garlic and add back pasta. Stir well.
    2. Add in sauce and spinach and stir about 30 seconds until spinach wilts


    Final Comments


    Variations- fry mushroom and add. Roast or steam zucchini or pumpkin, grate in some carrot. Steam some broccolini or asparagus. Basically the more veg the better (less pasta if there is a lot of veg)
