    Quorn sausages packet

    You can of course mess with what you put in here (I have also made it with cauliflower or eggplant and seaweed instead of sausages or added mushrooms and I prefer to use soaked saffron threads instead of turmeric but whatever)


    List of Ingredients


    • 2 tbsp olive oil (or similar)
    • 300g quorn sausages (or any good vegan sausage that you like)
    • 1 onion, thinly sliced
    • 1 red capsicum, sliced
    • 1 yellow capsicum, sliced
    • 2 large tomatoes, diced (or half tin of diced tomato)
    • 200g cut green beans
    • 1 1/4 cups short grain rice (bomba is the best)
    • 1 1/2 tsp paprika (I like the smoky one but either is fine)
    • 1 tsp tumeric (or pinch saffron in water)
    • 3 cups veggie stock (or hot water and stock powder)
    • 1 1/2 cups peas
    • zest of 1 lemon


    Instructions


    1. Heat half the oil and cook frozen quorn sausages 3-4 min until browned but not fully cooked through. Remove and cut into bite sized pieces.
    2. Heat remainder of oil (in a large wok or paella pan) and saute onion and capsicums for 5 minutes. Stir in tomatoes and beans and cook another 5 minutes.
    3. Add rice, paprika, turmeric and stock. Bring to boil and simmer 15 minutes. Return sausages to pan and add peas. Simmer 5 more minutes or until rice is tender (add more liquid if required)
    4. Add zest of lemon, season to taste (I would probably do the latter at the onion and capsicum stage) and serve.


    Final Comments


    Sometimes I add 1/2 cup white wine substituting it for 1/2 cup of the stock. If I don;t have something I leave it out or swap it out. Tofu is Ok instead of sausages too. If you are having a dinner party serve with salad, crusty bread and dry white wine (or red)
