    Other things I would consider putting in this salad- parsley or other herb, cucumber, celery, corn, apple, mushroom, garlic or whatever I have

    List of Ingredients

    • I bunch asparagus
    • 1 can (400g) butter beans (or other beans you like)
    • 3 spring onions
    • 1 handful lettuce leaves
    • 1/3 cup mint leaves
    • 1 tbs seeded mustard
    • juice of 1 large lemon
    • 2-3 tbs olive oil
    • salt and pepper to taste
    • 2 large tomatoes
    • 2 tbs LSA


    1. Boil salted water and blanch asparagus until bright green but not too soggy. Drain and refresh to stop the cooking process.
    2. Drain beans and wash well. Place in salad bowl with spring onions, lemon, oil, salt, pepper and mustard. Mix well
    3. Finely shred spinach and mint and add to salad. Mix well. Slice asparagus and chop tomatoes and toss through. Sprinkle over LSA and leave 20 min so flavours infuse.
    4. Serve with salad leaves or as it is.
