    You could add vegan cheese to this. I hate cheese so I don't. I just mix in bland vegies like zucchini when I cook it with pasta if I dont feel like being overwhelmed by basil (but the spinach makes it a bit milder anyway)


    List of Ingredients


    • 1 bunch basil
    • equal amount baby spinach (vary the proportions as desired)
    • 4 cloves garlic- or even more
    • extra virgin olive oil (a good one)
    • 1 packet pine nut and slivered almond mix (cheaper than just pine nuts and I like it better)
    • lemon juice
    • salt and pepper


    Instructions


    1. Use a food processor or if you are really old school a mortar and pestle (I have done it) to combine basil, spinach, garlic and as much olive oil as it seems to ask for.
    2. Mix through the nuts. Add lemon, salt and pepper to taste. Use fresh in your gf pasta or on flat mushrooms or anyway you want to or cover carefully if using any part of it later.


    Final Comments


    To keep it longet add more oil over top. You can flavour it with sundried tomato, grilled capsicum, olive, chilli, parsley, mint, chives or however you like. It's a good sauce with most vegies you might mix with pasta (mushroom, zucchini, beans, cherry tomatoes) and works well on vegan burgers as a spread
