    Pumpkin Bread

    This recipe was given to me ages ago, can't remember by who

    Recipe Introduction

    This is a simple recipe - but you have to make sure you thoroughly mix all ingredients. It is the most moist bread and delicious with butter spread on when warm. NOTE: I sometimes make half the recipe so the measurements to the right [ ] is for a half batch

    List of Ingredients

    Full Batch [Half Batch]
    3 cups sugar [1 1\2 ]
    1 cup oil [1\2 ]
    4 eggs (well beaten) [2 eggs ]
    -------
    3 1\2 cups flour [1 3\4 ]
    1 1\2 tsp salt [3\4 ]
    2 tsp soda [1 tsp ]
    1 tsp nutmeg [1\2 tsp ]
    2 tsp cinnamon [1 tsp ]
    1\2 tsp ginger [1\4 tsp ]
    -------
    2 cups pumpkin [1 cup ]
    1 cup chopped nuts
    (I use walnuts) [1\2 cup ]

    Recipe

    Preheat oven 325-350' F.

    Combine sugar, oil, eggs. Beat until mixed. Set aside.

    Combine dry ingredients and add, stirring well after each addition.

    Add pumpkin and nuts. Mix well.

    Pour batter into greased and floured pans.
    Fill 2\3 full. (1 lb coffee cans make beautiful loaves)

    Bake 1 hour 15 min or until golden brown and toothpick inserted in the center comes out clean.
