My Chicken Enchiladas ««

Recipe Introduction
I use my basic crocked chicken recipe for the meat in this delicious recipe. My family loves it.
List of Ingredients
3 lb cooked chicken (See "My Basic Crocked Chicken" recipe)
1 lrg can Enchilada sauce
1 can Tomato Soup or Tomato paste (I use either)
2 cups Mexican blend cheese (or jack & cheddar)
Recipe
Mix one lrg can enchilada sauce with 1 can tomato paste (or tomato soup) - add 1 tsp. cumin and set aside***************
Prepare corn tortillas by cooking lightly in oil just until soft and set aside.*****************************************
Dip toritllas in prepared Enchilada sauce add some shredded cooked chicken and mexican blend cheese - - roll and place seam side down in a 9 x 13 in casserole dish. repeat process about 14 tortillas. Pour rest of Enchilada sauce over top and top with remaining cheese.*********************
Bake in 350* oven 20-25 min.********************************
NOTE: Sour cream and olives may also be used as garnish.
