    Leftovers of this soup will thicken to a stew the next day.
    You can enjoy it as a stew or to return it to a soup, add 4 cups of water or 4 cups of tomato juice.

    List of Ingredients





    4 cups tomato juice
    4 cups water
    0.5 cup quinoa (dry, rinsed)
    1 cup beans (your choice)
    1 lb vegetables (frozen, mixed)
    1 TBSP cajun spice (or any spice with a bite)
    1 tsp pepper

    Place all ingredients in a pot.
    Bring to a boil lower to a slow boil.
    Soup is done when beans are soft.

    Leftovers of this soup will become a stew the next day.
    You can enjoy it as a stew. To return it to a soup,
    add 4 cups of water or 4 cups of tomato juice.
