    Recipe Introduction


    Serving is 1/4 piece of fish and 1 cup vegetables. 1 serving equals 7 pts.


    List of Ingredients


    • 1 lb.small white or red potatoes, scrubbed and cut into 1/4-inch-thick slices
    • 2 red onions, each cut into 8 wedges
    • 5 tsp. extra-virgin olive oil
    • 1 tsp salt
    • 1/4 tsp freshly ground pepper
    • 4 plum tomatoes, chopped
    • 1-1/2 lbs. cod, haddock, flounder, sole or tilapia


    Instructions


    1. Preheat oven to 450 degrees. Spray a large shallow baking pan with nonstick spray.
    2. Combine the potatoes, onions, 3 tsp. of the oil, 1/2 tsp. of the salt and 1/8 tsp. of the pepper in a large bowl; toss well. Spread in a single layer in the baking pan. Roast, stirring occasionally, until the vegetables are slightly softened, about 20 minutes.
    3. Meanwhile, combine the tomatoes wit the remaining 2 tsp. oil, 1/2 tsp. salt and the 1/8 tsp pepper; set aside.
    4. Remove the baking pan from the oven. Slide the potatoes and onions to one side and place the cod fillet on the other side of the baking pan. Spoon tomato mixture on top of the cod. roast until the fish is just opaque in the center and the potatoes are tender and lightly browned, 15 - 18 minutes.
