    Recipe Introduction


    Makes 4 servings (2 thighs each) at 6 pts per serving.


    List of Ingredients


    • 1/2 cup plain fat-free yogurt
    • 1 T. grated peeled fresh ginger
    • 1 T. cayenne pepper sauce (Franks Redhot or similar)
    • 2 tsp. curry powder
    • 1/4 tsp. salt
    • 8 small skinless, boneless chicken thighs, trimmed of all fat


    Instructions


    1. To prepare the marinade, combine the yogurt, ginger, pepper sauce, curry powder and salt in a large zip-close plastic bag. Add the chicken. Squeeze out the air and seal the bag; turn to coat chicken. refrigerate, turning the bag occasionally, for at least 1 hour or overnight.
    2. Spray the grill or broiler rack with nonstick spray; prepare the grill of preheat the broiler.
    3. Remove the chicken from the marinade, scraping off any excess; discard the marinade. Grill or broil the chicken 5-inches from the heat until cooked through; 8-9 minutes on each side.
