    Blueberry Buttermilk Pancakes

    List of Ingredients




    1 c. buttermilk
    1 egg
    3 T. butter, melted
    3/4 c. all-purpose flour
    Pinch of salt
    1 tsp. baking soda
    Blueberries (as much as you want, fresh or thawed frozen)
    Beat egg. Add buttermilk and mix. Stir in the flour, salt and baking soda and mix until blended. Add the melted butter and stir. Add blueberries. Heat a skillet or griddle until medium hot. Grease lightly (I use nonstick and don't bother to do this). Spoon out batter, about 3 tablespoons for a medium sized pancake. When bubbles appear, flip the pancakes. Serve with butter and real maple syrup.
