    Chicken and Dressing Cassarole

    1 package Pepperidge Farm cornbread stuffing
    3-4 chicken breasts
    1 can cream of chicken soup
    12 oz sour cream
    1/3 cup chopped onions
    Spray a 9x13 pan with Pam. Poach chicken breasts; when cool enough to handle, tear or cut into bite sized pieces. Put all but about 3/4 cup stuffing in the pan and moisten evenly with chicken broth (the water in which you poached the chicken). Put chicken pieces over the stuffing. Stir together sour cream and soup (I did not use but 8 oz sour cream and it was fine), mix in onions. Pour over the chicken. Sprinkle remaining stuffing over top. Bake at 350 degrees for 30-45 minutes. Serves 6-8.
    I served it with cranberry sauce. I think this will freeze well. It got a little dry when I reheated it in the microwave and will cover it better next time and add a little more broth to the stuffing. I would think you could even use non-fat sour cream if you wanted to.
