    Spicy African Chicken Stew

    List of Ingredients




    3Cs. cooked rice {cooked as directed on Pkg.}

    1Tbsp. Vegetable Oil

    1Lb. boneless, skinless Chicken Breasts and Thighs, cut into
    1-inch pieces

    1 1/2Cs. chopped Onions

    2 Garlic Cloves, minced

    1 {28ozs.} can Diced or Chopped Tomatoes, undrained

    1/4C. Creamy Peanut Butter

    1/2tsp. Chili Powder

    1/2tsp. Salt

    1/4tsp. crushed Red Pepper Flakes

    1/2C. chopped Dry-Roasted Peanuts

    Directions
    Heat oil in Duch oven or large saucepan over medium-high heat
    until hot. Add chicken, onions and garlic; cook and stir 5 minutes
    or until chicken is browned and onions are tender.

    Stir in tomatoes, peanut butter, chili powder, salt and red pepper
    flakes. Bring to a boil. Reduce heat; cover and simmer 35
    minutes.
