    2 cups long grain white rice

    8 oz. sour cream (Light)

    2 cup shredded cheese (Monterey Jack)

    1 4oz. canned green chilies (I prefer the hot heat level)

    3 tbs. butter

    Cook rice. Preheat oven to 350 degrees. In a baking dish add the cooked rice, make sure it’s cooled down. Then add sour cream, shredded cheese (save some for topping), green chilies, mix well. Sprinkle with cheese and top with butter. Salt and Pepper to taste. Place in oven and bake for about 20 minutes.

    Serves 4-6.
