    Minestroni soup

    List of Ingredients




    2 medium onions, chopped

    2 carrots, diced

    3 celery stalks chopped

    3 mild Italian sausages, skinned (about 1 pound)

    2 tablespoons butter

    1 medium zucchini, chopped

    12 cups chicken broth

    1 cup spaghetti, in 1-inch pieces

    1 teaspoon dried oregano

    1 large can(at least 28 ounces) tomatoes, peeled, crushed in
    juice

    salt and pepper to taste

    Recipe



    Directions
    In saucepan, mix onion, carrot, celery, crumbled sausage and
    butter.

    Cook on medium-high, stirring with wooden spoon, 5 to 10
    minutes until sausage browns.

    Turn off heat. Add zucchini, broth, spaghetti, oregano and
    tomatoes, with juices.

    Stir lightly. Bring to boiling on high.

    Reduce heat.

    Simmer, uncovered, 30 minutes until pasta and vegetables are
    tender.

    Stir occasionally.

    Cool to refrigerate.
