Potato Cheese Soup
one stick butter
3/4 cup finely chopped onion
3/4 cup finely chopped carrot
1 Tbs chopped parsley
16 0z chicken stock
1 large potato, peeled and cubed
1 cup grated cheddar cheese
Recipe
Melt butter over med heat. Sauce carrots and onions until tender. Add stock chicken stock, parsley and potatoes, and continue
cooking until potatoes are soft. Strain vegetable mixture from liquid and save liquid.Puree vegetable mixture in blender. Return
to pot over low heat, melt in cheese, stirring constantly and add saved liquid until desired consistency is reached. salt and
pepper to taste Makes one quart.*(this is my opinion)*omit the blender step, and mash with potato masher, add cheese.Top
with crumbled fried bacon
