    Artichoke Nibbles


    2 6-8 oz jars marinated artichoke hearts-chopped
    1 small onion finely chopped
    1 garlic clove minced
    4 eggs beaten
    1/4 cup breadcrumbs
    1/4 t.salt,
    1/8 t. pepper
    1/4 t. oregano
    2 cups shredded sharp cheddar cheese
    Preheat oven to 325 deg. Drain marinade from jars into skillet(I only use 2 T of oil). Heat oil and saute onion and garlic until soft. Combine eggs,breadcrumbs and seasonings. Fold in cheese. Add artichokes and onion mixture, blending well. Pour into 8 in. square baking dish. Bake 30 min. Cool briefly before cutting into squares. May be prepared 1-2 ahead and reheated.
