    Bacon + Spice Bites

    1 pound bacon, not thick-sliced,
    ...cut in 1/2 and let get to room temperature
    1 1/4 cups brown sugar
    2 teaspoons cinnamon

    Mix sugar and cinnamon together and thoroughly coat each
    slice of bacon. Twist or leave slices flat. Place on rack in
    broiler or jellyroll pan at 350 degrees F.
    Bake until bacon is crisp and sugar is bubbly, 15 to 20 minutes.
    The sugar can burn quickly, so watch closely.
    Let cool and serve at room temperature.
    Makes 16 to 20 appetizer servings.
