    1 1/4 cups apricot jam

    2 Tb dijon mustard

    3 cups bread crumbs

    1 lb chicken tenders (about 16 pieces)

    16 bamboo skewers soaked in water for 30 minutes (note: the recipe says to soak them - I think it prevents scorching. I've never soaked them - don't have the patience for it. So my skewers scorch and it's no big deal except it probably doesn't look as pretty.)

    8 oz deli ham, halved crosswise







    Instructions


    Preheat oven to 450 F. Lightly oil a large baking pan.

    Reserve 1/2 cup jam. Stir together the remaining jam and mustard for the dipping sauce.

    Spread the bread crumbs on a plate.

    Thread each piece of chicken lengthwise onto its own skewer. Wrap each with a piece of ham, and then brush with some of the reserved jam. Roll in bread crumbs, pressing with your fingers to stick it on as needed.

    Arrange the skewers onto the pan.

    Bake, turning once, until bread crumbs are golden and chicken is cooked through, about 20 minutes.
