    Rosa Mexicano Guacamole

    2 tsps minced jalapeno or serranos (remove seeds, cores and pith before mincing)
    1/3 cup finely diced white onion
    2 tbsps. minced fresh cilantro leaves
    1/2 to 3/4 tsp salt
    1 ripe avocado
    3 tbsps diced tomato (seeds and ribs removed)

    In a mortar or mxing bowl combine 1 tsp peppers, 2 tbsp onion, 1 tsp corander and 1/2 tsp salt. Mash with the back of a spoon to form a wet paste.

    Halve avocado lengthwise and remove pit. Cut avocado into 1/2 inch dice. Lift pieces from skin with a spoon to avoid mashing and add to mortar or bowl. Stir gently.

    Add remaining peppers, onion, cilantro and tomato and stir carefully. Adjust seasoning with salt, coriander and peppers. Serve immediately. Makes 2 servings
