SOURDOUGH BUTTERMILK PANCAKES

2 c. flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
2 tbsp. sugar
1 tsp. salt
1 c. buttermilk
1 c. Sourdough Starter
2 eggs, beaten
2 tbsp. vegetable oil
Have all ingredients at room temperature.
Combine first 5 ingredients in a non-metal bowl, wisk to combine. Add buttermilk, Sourdough Starter and eggs, stir until large lumps disappear. Do not over beat. Stir in oil. Let rest for 20 minutes. For each pancake, pour about 1/4 cup batter onto a hot, lightly greased griddle. Turn pancakes when tops are covered with bubbles and edges look cooked. Yield: 12 (4 inch) pancakes.
