    Here's my mincemeat recipe. It makes enough for 3 pies & the filling freezes beautifully.

    HOMEMADE MINCEMEAT

    1-Pound Beef Stew Meat
    4-Pounds Apples
    4-Ounces Suet
    1-15 ounce Package Raisins
    2-1/2 Cups Sugar
    2-1/2 Cups Water
    2-Cups Dried Currants
    1/2-Cup Chopped Mixed Candied Fruits and Peels
    1-Teaspoon Grated Orange Peel
    1-Cup Fresh Orange Juice
    1-Teaspoon Grated Lemon Peel
    1/4-Cup Fresh Lemon Juice
    1-Teaspoon Salt (if, desired)
    1/2-Teaspoon Ground Nutmeg (fresh ground is best)
    1/4-Teaspoon Ground Mace

    Cover beef with water; simmer, covered until tender, about 2 hours. Drain & cool.

    Peel, core, and cut up apples.

    Put beef, apples, and suet in the food processor and pulse until everything is ground evenly & well combined.

    In large Dutch oven or heavy-bottomed stockpot, combine ALL ingredients. Cover, simmer 1 hour stirring often. How long to simmer can vary greatly depending on the water content of the apples. Sometimes, I've had to simmer for nearly 3 hours. It's thick enough when you can pull a large wooden spoon through the mixture to the bottom of the pan & see the pan bottom for a few seconds before the mixture fills in the space again.

    To make the pie...make your usual two-crust pie dough & fill with one-third of the above mixture. Bake at 400 degrees for 35-40 minutes. Remaining mincemeat can easily be frozen in individual pie size containers.
